Portobello Mushroom Waffle Sandwich

Sweet, savory and packed with vegetables, this is a fun brunch option for non meat eaters.

Portobello Mushroom Waffle Sandwich


  • 1 cup buttermilk waffle mix (prepared)
  • 1/2 mushroom Peak Fresh Produce portobello mushrooms (sliced)
  • 3 oz. pepper(s), roasted red
  • 1 slice gouda, smoked
  • 1 oz. Archidean blend


Pour waffle mix into waffle iron and cook until slightly done. Place portobellos in sauté pan and cook until tender. In the same pan, heat roasted red peppers. Place greens on bottom of waffle. Layer with roasted red peppers and mushrooms. Place cheese on top of mushrooms and finish with Archidean blend. Fold, plate and serve with fresh fruit or your choice of side.
