Brunch Grilled Cheese

The ultimate grilled cheese for brunch with bacon, waffles and three kinds of cheese.

Brunch Grilled Cheese


  • 1 cup waffle mix
  • 2 slices Ridgecrest bacon, apple wood-smoked
  • 3 oz. Bacio 50/50 mozzarella blend
  • 2 slices gouda, smoked
  • 2 slices West Creek Cheese, Cheddar, White


Place waffle mix into waffle iron and cook. When finished, cut into 4 pieces. Layer white cheddar, bacon, gouda,then cheddar on bottom of waffle. Place in melter then top with other piece of waffle. Repeat process with other 2 pieces. Plate and serve with brunch potatoes.
