Vodka Steamed Mussels in Tomato Cream


  • 1 1/2 oz Land O'Lakes® Unsalted Butter
  • 1 tbsp Peak Fresh Produce® Garlic, Clove(s) (chopped)
  • 1 lb Empire’s Treasure® Mussels, Black
  • 1 oz vodka
  • 2 oz Roma® Marinara Sauce
  • 1 each Peak Fresh Produce® Lettuce, Leaf
  • 2 each Peak Fresh Produce® Lemon(s)
  • 2 slices Heritage Ovens® Roll(s), Ciabatta Panini (toasted)
  • 2 oz cream reduction


Heat 1 oz butter in a small sauté pan. Butter both sides of two pieces of thick sliced ciabatta with remaining butter and place on the grill to toast. Add garlic to sauté pan and briefly sauté. Add mussel pack and toss. Add vodka and continue to sauté. Add marinara sauce and cream reduction to sauté pan and toss to combine flavors. Line one edge of a large pasta bowl with leaf lettuce. Place mussels in a large pasta bowl. Cover with remaining sauce. Insert two pieces of ciabatta into mussels, garnish with lemon wedges and serve immediately.
