Beer Cheese Soup

Serves: 15

Creamy beer-cheese soup is delicious topped with chopped crispy bacon and scallions. Serve with a Rye Street soft pretzel on the side!

Beer Cheese Soup


  • 5 pounds West Creek Beer Cheese Dip (thawed)
  • 2 oz. oil, canola
  • 16 oz. Peak Fresh Produce carrot(s) (diced, 1/4 inch)
  • 16 oz. Peak Fresh Produce onion(s) (diced, 1/4 inch)
  • 1 Tbsp. Peak Fresh Produce pepper(s), red bell (diced)
  • 1 quart chicken broth
  • 8 oz. Ridgecrest bacon, apple wood-smoked (cooked and diced)


Heat Craft Beer Cheese Dip in steamer or water bath for 30 minutes or until product reaches 140°F for 15 seconds. Simmer carrots, onions, and peppers in oil until slightly caramelized and tender. Add chicken broth and simmer for approximately 20 minutes. Combine with heated Craft Beer Cheese Dip and blend well. Garnish with chopped parsley and chopped bacon prior to service.
