Sriracha Cod Quesadillas

A unique twist on your typical quesadilla, fried cod bites are the protein in this spicy combination.

Sriracha Cod Quesadillas

INGREDIENTS

  • 3 oz. Sriracha Cod Bites
  • 1 Contigo® Tortilla(s), Flour, Burrito Size
  • 3 oz. Bacio® Cheese, 50/50 Mozzarella Blend
  • 1 oz. Peak Fresh Produce® Onion(s), Green
  • 1.5 oz. Contigo® Guacamole
  • 1.5 oz. Contigo® Salsa, Medium
  • 3 oz. black bean & corn salsa
  • 1.5 oz. Nature's Best Dairy® Sour Cream, All-Natural

INSTRUCTIONS

Place cod bites in the fryer. Butter tortilla and place on flat top or grill. Sprinkle cheese over entire tortilla. Spread corn salsa over tortilla. Spread onions over tortilla. Chop cod and spread over tortilla. Fold in half and place on cutting board. Slice 3 times, forming wedges. Place guacamole, sour cream and salsa in 2-ounce cups.Shingle, place cups next to quesadilla and serve.
