Goat Cheese and Walnut Pesto Sandwich

A delicious vegetarian sandwich, this sandwich combines goat cheese, avocado, tasty walnut pesto and a zesty vinaigrette.

  • Goat Cheese Sandwich

    INGREDIENTS

    • 1 avocado(s) (sliced)
    • 2 cups Peak Fresh Produce celery, stalk(s) (cut on bias)
    • 2 Tbsps. Nature's Best Dairy cheese, goat
    • 8 slices Heritage Ovens bread, Multi-grain
    • 2 cups watercress

    INSTRUCTIONS

    Spread goat cheese on 4 slices of bread.  In a bowl toss the celery with 4 tablespoons of the vinaigrette and place on top of goat cheese.  Add watercress to bowl with vinaigrette and toss. Place on top of celery.  Place avacado slices on top of watercress then spread 4 tablespoons of the walnut pesto on other 4 slices of bread. Close sandwiches and slice then serve.

  • Walnut Pesto

    INGREDIENTS

    • 1/4 Cup(s) walnuts, pieces
    • 2 Cup(s) Piancone olive oil, extra virgin
    • to taste salt, kosher
    • to taste Burst black pepper, ground
    • 1/2 Cup(s) Peak Fresh Produce basil
    • 1 Peak Fresh Produce garlic, clove(s)

    INSTRUCTIONS

    Toast walnut pieces then place in food processor with salt, pepper, basil and garlic and puree.  While blender is running add olive oil to form pesto.
