Roma Lobster Ravioli tossed in a creamy Walnut Sherry Sauce and topped with a scallion garnish.

Lobster Ravioli with Walnut Sherry Cream Sauce

INGREDIENTS

  • 10 Roma Ravioli, Lobster (cooked as directed)
  • 2 tbl West Creek butter, unsalted
  • 1 tbl shallot(s) (finely chopped)
  • 1/4 cup sherry
  • 1 oz walnut butter
  • 1.5 cup cream, heavy
  • 2 tbl scallion(s) (thinly sliced -optional)
  • - to taste salt and pepper

INSTRUCTIONS

In a sauté pan, add butter and shallots over medium heat for 1 minute. Add walnut butter and cook for 1 additional minute. Add sherry, simmer for 1 additional minute. Add heavy cream, and bring to a simmer. Salt and pepper to taste. Add cooked ravioli to pan and toss to coat. Garnish with the scallions.
