Herb Roasted Tear Drop Tomatoes

INGREDIENTS

  • 1/2 c. Piancone olive oil, extra virgin
  • 1 c. tomatoes, red teardrop (halved)
  • 1 c. tomatoes, golden teardrop (halved)
  • 1 tsp. Peak Fresh Produce basil, fresh (minced)
  • 1 tsp. Peak Fresh Produce Oregano (minced)
  • 1/4 tsp. salt, Kosher
  • 1/4 tsp. Roma black pepper, ground

INSTRUCTIONS

Heat oven to 400 degrees. Toss tomatoes with salt, pepper, fresh herbs, and olive oil. Roast in oven for 7-8 minutes then serve.
