Herb Roasted Tear Drop Tomatoes

INGREDIENTS

  • 1/2 c. Piancone® Oil, Olive, Extra Virgin
  • 1 c. tomato(es), red teardrop (halved)
  • 1 c. tomato(es), golden teardrop (halved)
  • 1 tsp. Peak Fresh Produce® Basil (minced)
  • 1 tsp. Peak Fresh Produce® Oregano (minced)
  • 1/4 tsp. salt, kosher
  • 1/4 tsp. Roma® Black Pepper, Ground

INSTRUCTIONS

Heat oven to 400 degrees. Toss tomatoes with salt, pepper, fresh herbs, and olive oil. Roast in oven for 7-8 minutes then serve.
