The Wild Caught in the U.S.A. logo is used to identify species that are naturally wild and live on a wild diet in the waters of the United States. Our wild-caught seafood comes from thriving areas that include the Bering Sea, Bristol Bay, Prince William Sound, Alaskan waterways, the coasts of Maine, Rhode Island, Oregon, Washington, Texas, Mississippi and North Carolina, to name a few. Our suppliers in the United States must comply with federal regulations for fishing in the United States waters as dictated by the National Atmospheric and Oceanic Administration (NOAA). This organization implements programs to prevent overfishing, rebuild overfished stocks, ensure conservation and protect essential fish habitats.
The Farm Raised in the U.S.A. logo is used to identify species that are raised on aquaculture farms throughout the United States. Generally this process starts in a hatchery and the seafood is later released into contained, quality environments, and are commonly fed grain diets. Much of our seafood comes from farms in the deltas and low lying lands of Mississippi, Alabama, and Florida, which are some of the most acclaimed locations in the country for farming, along with many tiny keys off the Gulf Coast. These farms provide substantial economic opportunity for the aquaculture communities in the rural South. We require our suppliers to provide current information about the origin and processing of farm-raised fish, including insight to farm ownership, measures taken to prevent species invasion, labor codes of conduct, feed, antibiotic usage, scientific identity, DNA testing, water testing, product additives, etc. We also require our suppliers to attain third-party certification of their farmed fish.
We all know there are lots of fish in the sea. Many of those fish look just alike once they've been filleted, making it difficult or impossible to distinguish one species from another. Our Species Verification program utilizes DNA testing to validate commonly mislabeled species such as grouper, red snapper, domestic squid, and others. It is important when our customers order Performance Foodservice branded fish, they have 100% confidence that the species they receive is correct and not a different species of lesser quality or cost. Species substitution is a type of fraud that is strictly regulated and monitored by the FDA. To help protect our customers from seafood fraud, Performance Foodservice created a Species Verification program that uses DNA testing to prevent species substitution from occurring. Samples from our branded fish that are verified through this program are sent to an outside laboratory for DNA testing and screening against a species database owned by the FDA. The results we receive from the Species Verification program are your assurance from us that Performance branded grouper is grouper and red snapper is red snapper. If the DNA does NOT match species to species, then Performance Foodservice will not sell you the fish.
