Baked Zucchini Fries


  1. Line a baking sheet with foil, spray with cooking spray, and preheat oven to 425 degrees F.
  2. In a small bowl, mix together bread crumbs and Parmesan cheese.
  3. Whisk eggs in a separate bowl.
  4. Coat zucchini strips into the egg, allow excess to drip, and roll bread crumb mixture.
  5. Transfer coated zucchini strips to the prepared baking sheet and bake, turning once, until golden and crisp, 20 to 24 minutes.


  • 1/2 cup bread crumbs, dry
  • 2 Nature's Best Dairy® Egg(s), beaten
  • 3 Peak Fresh Produce® Zucchini, cut into 1/2" strips
  • 1/4 cup Roma® Cheese, Parmesan, grated
