Tuna Poke Twisted

Directions

  1. In a bowl place the diced tuna, avocados, sugar, jalapenos & ½ of each of these, rice vinegar, soy sauce, grapefruit juice & dressing. Toss until evenly coated
  2. Place the spinach leaves shingled in small bowl.
  3. Place the noodles in the center of the bowl
  4. In a separate bowl add the rest of the sugar, soy sauce, vinegar, grapefruit juice and dressing
  5. Mix thoroughly and pour over noodles
  6. Add the tuna on top of the noodles
  7. Take the Cucumber ribbons and carrot ribbons and line the sides of the noodles around the inside of the bowl
  8. Sprinkle the black sesame seeds over the top of all the ingredients
  9. Place the microgreens on top of the tuna and serve

  • 1 oz. microgreens

  • 1/2 tsp. Peak Fresh Produce® Grapefruit, juice only
  • 10 slices Peak Fresh Produce® Pepper(s), Jalapeño
  • 5 leaves Peak Fresh Produce® Spinach
  • pinch sesame seeds, black
  • 1 Tbsp. Village Garden® Sesame Ginger Vinaigrette
  • pinch West Creek® Sugar, Granulated
