Sauteed Tortellini with Grilled Vegetables


  1. Cook Tortellini according to package directions and drain well.
  2. In large frying pan on medium heat, warm oil and garlic, cook 2 minutes. Add butter and cook 1 minute. Add drained tortellini, stirring until well coated. Add grilled vegetables (red peppers, zucchini, squash), salt and pepper.
  3. Cook 5 minutes. Sprinkle top with parsley and shredded parmesan cheese. Toss and serve warm.


  • 1 tsp black pepper

  • 2 tbsp Peak Fresh Produce® Garlic, crushed
  • 2 tbsp Peak Fresh Produce® Parsley, Fresh, minced
  • 1/2 cup Roma® Cheese, Parmesan, shredded
  • 19 oz Roma® Gourmet Tortellini, Cheese
  • 3 tbsp Roma® Oil, Olive
  • 1 tsp salt
  • 3 cups vegetables, mixed, grilled, cut into bite size pieces
