Pizza continues to be one of the most versatile platforms on the menu, giving operators nearly endless opportunities to respond to changing tastes, seasonal ingredients, and globally inspired flavors. And while the toppings may grab attention, cheese remains at the heart of what makes a great pizza work.
That was on full display at the 2026 Real California Pizza Contest, where eight talented chefs put California cheese and dairy at the center of original pizza concepts designed to deliver both creativity and real-world menu appeal.
Selected from more than 200 entries, this year’s finalists competed across two categories: On the Menu — focused on pizzas suited for permanent menus, seasonal features or limited-time offers — and California Freestyle, which challenged chefs to push creativity with multiple California dairy products and California-inspired ingredients.
The results offer plenty of inspiration for operators looking to rethink what cheese can bring to the pizza menu.
Build Flavor by Layering Cheeses
Mozzarella may be the essential starting point, but today’s pizzas can create greater differentiation by layering cheeses with contrasting flavors and textures.
Grand Prize and On the Menu winner Chef Zack Calder demonstrated that approach with Valley Heat, Vine Sweet, combining Real California mozzarella, ricotta, and a hard grating cheese. The cheeses provide creamy, rich, and nutty elements that complement the pizza’s balance of sweet fruit, spicy heat, and savory toppings.
California Freestyle winner Chef Jimmy Henry took the concept in an entirely different direction with Motor City Elote. Inspired by the flavors of Mexican street corn, the pizza brings together Real California mozzarella, Cotija, and crema with roasted corn, smoky spices and bright, zesty flavors.
Across the finalist recipes, chefs went well beyond traditional pizza cheeses, incorporating California-made products ranging from Monterey Jack and Muenster to Brie, crème fraîche, cream cheese, and other specialty cheeses and dairy products.
For operators, that variety provides a useful lesson: cheese can do much more than provide coverage. Different varieties can add richness, tang, saltiness, creaminess, melt, and distinctive flavor, giving chefs another tool for turning familiar pizza formats into memorable menu experiences.
Turn Trends into Menu Opportunities
The contest recipes also demonstrate how cheese can help operators tap into broader menu trends without losing the familiarity and craveability that make pizza so appealing.
Globally inspired flavors can be paired with familiar cheeses. Specialty varieties can bring an elevated touch to premium pizzas. Multiple cheeses can be layered to create greater depth, while creamy dairy ingredients can provide contrast to spicy, smoky or acidic components.
The opportunity extends beyond simply adding more cheese. It is about selecting cheeses that serve a purpose within the finished pizza and using their individual characteristics to build a more complete flavor experience.
For sales teams, these recipes can also provide conversation starters with operators looking for new LTOs, seasonal specials, or signature pizzas. Rather than starting with a single ingredient, start with the menu opportunity: What flavors are guests looking for? Where could a familiar pizza use a fresh twist? Could a different cheese or combination of cheeses create something guests can’t find elsewhere?
