The first bite at a restaurant can set the tone for the entire meal. As someone who goes out to eat frequently, I love a bread basket or a chips-and-salsa situation, but that first bite can also provide operators an opportunity to wow guests with something novel and unexpected. From single-bite delights to crunchy, fermented vegetables, there’s something irresistible about starting a meal with a little surprise.

The best part? You don’t have to break the bank to provide your guests with this kind of elevated hospitality experience. By thinking outside the confines of the standard bread basket, your welcome bite could become a highlight of the dining experience.

As consumers are inundated with a variety of leisure options that impact their wallets, diners are specifically seeking out value when they go out to eat. I know that a little extra taste at the start of a meal certainly makes me feel like I’m getting more bang for my buck and keeps me occupied while awaiting my order. These creative and trend-driven bites can help make that kind of impression at your establishment too.

Aperitivo, Anyone?

The summer of 2026 really saw American aperitivo culture² at its height. One thing is for sure: Diners want to embrace a Euro summer moment, regardless of the season, even when they’re close to home. By offering guests some small, snacky items to enjoy with their drinks, you’ll tap into that desire for value and might prompt them to order more than a single round.

Aperitivo-style offerings served alongside beverages can range from snacks as simple as well-seasoned popcorn to salty crackers or corn nuts. Olives and sweet nuts, like Magellan® Candied Nuts, can make a simple aperitivo spread feel a bit more luxurious.

Banchan Bites and Fermented Faves

³Korean food is absolutely having a moment in the United States, and I’ve seen banchan, the many, various small side dishes that often accompany Korean rice dishes, pop up more and more at Korean restaurants and beyond. Kimchi is a popular banchan that also leans into the seemingly ubiquitous fermented food trend. A variety of fermented, banchan-style bites make for an excellent start to a meal while also functioning as accompaniments to the main course.

Don’t assume that you have to serve traditional Korean banchan or kimchi specifically, though. In light of the 2026 pickle craze, housemade pickles are an undeniably fun and relatively affordable option that fulfills those crunchy, salty cravings and promise the same bold flavors you’ll often find in traditional fermented banchan. And who doesn’t love a colorful giardiniera?

Break Better Bread

To be clear, I’m not ever against a complimentary bread basket when I go out to eat. But if I had to choose between a dinner roll or a more flavorful, memorable starchy loaf, I’d pick the latter. Luckily, there are countless ways to get creative with your bread selection while keeping costs low. Perfectly Southern® Southern-style Cornbread, for example, makes for a fun addition to a bread basket. If you really want to switch things up, you can opt for Soft Bavarian Pretzel Bites, served with a rich, gooey Delancey Street Deli Beer Cheese. Even a good hunk of garlic bread or Roma Garlic Knots can be an upgrade from a standard slice.

One-Bite Wonders

I think we’re just beginning to see the more widespread flourishing of the amuse-bouche trend, where restaurants are serving up tiny portions of thoughtful, elevated bites at the start of the meal. It’s not all caviar and blinis, though. I’ve noticed deviled eggs popping up more and more on menus, perhaps because they somehow feel both sophisticated and nostalgic. Cucumber canapés are a fresh but unfussy option, or you can opt for something more rich and substantial, like Contigo® Tequeños.

When you start off a meal by tapping into unexpected and creative flavors that go beyond the basics, guests will remember that first bite until well after the last.
