As a frequent late-night diner, I love finding new after-hours spots that serve good grub. I’m not alone — late-night dining has risen by 10% per year since 2021, according to McKinsey.1

Unfortunately, finding a restaurant that’s open late can sometimes be tricky. But establishments can position themselves as their neighborhoods’ go-to, late-night spots by embracing the indulgent dishes they do best and spreading the word to guests about what they’re serving.

Cater to the Munchies Crowd

At a certain point in the evening, it’s time to transition to those fried and decadent dishes many of us crave at night.

  • Riffing on Classic Loaded Fries: Utilize unexpected toppings, like tangy Buffalo chicken or rich curry, or pull inspiration from different cuisines, tapping into the 2026 global comfort food trend the National Restaurant Association noted in its culinary forecast.2
  • Fried Asian Favorites: Turn to Asian Pride® for customizable favorites like rangoons, egg rolls, and potstickers.
  • Perfect the Personal Pizza: Personal pizzas are undeniably fun. Prioritize using quality ingredients, like Bacio Cheese and fusion toppings from Contigo® and your establishment could become known as the personal pizza place.

Reach out to potential guests just as those cravings are setting in by utilizing SWIPEBY, an AI-based marketing software that allows you to send highly customized remarketing emails to the guests that are most likely to stop in for those late-night hours.

Offer an Elevated Late-Night Escape

By serving elevated dinnertime dishes that scratch that late-night itch long after other restaurants, you can position your establishment as the place to go when diners crave a more  sophisticated late-night dining experience.

  • Short and Sweet Menu: A smaller menu for late night feels more focused and intentional, and it’s also a James Beard-identified trend of 2026.3 Menuetta can help you design and customize a smaller menu for your late-night offerings.
  • The Late-Night Pasta Place: It’s my dream to find a restaurant that serves up a mean plate of spaghetti at 2 a.m. Even better if you have a solid by-the-glass wine list.
  • Break Out the Boards: Cheese and charcuterie boards are simple to assemble late at night and promise fancy, snacky decadence.

Deliver Real Value

Diners are looking to get more meal for their money, so prioritizing value can be a huge selling point.

  • BOGOs and Bundles: By offering buy-one, get-one deals or food and drink bundles, you can attract the more budget-minded diners out there. Burgers, fries, and a beer for $25? Sign me up!
  • A Cheesy LTO: Use Contigo® Corn and Flour Tortillas to create gooey quesadillas as a value-focused limited-time offer. In 2026, 32% of restaurant LTOs are focused on value, up from 21% from just three years ago, according to Technomic.4 It’ll get guests in the door to check out your other late-night specials.

Offering fun, indulgent dishes, late-night sophistication, and excellent deals — and knowing how to market them — will have the after-hours crowds flooding in.
