Boursin Chicken Pesto Sandwich

Directions

  1. Dredge chicken in flour, eggwash, then breadcrumbs. Heat olive oil to 360 degrees in a saute pan over medium heat.
  2. Place breaded chicken into pan, cook until golden on each side about 3 minutes per side. Reserve until ready to assemble sandwich. 
  3. Place boursin cheese on top of cooked breast and melt.

  • 1/4 cup cheese, Boursin
  • 1 chicken, breast(s), frozen, breaded
  • 3 Peak Fresh Produce® Lettuce, Romaine, Leaf
  • 3 oz pesto sauce
  • 2 slices bread, seven grain, toasted
  • 1 Peak Fresh Produce® Tomato(es), 4 thin slices
