To prepare shrimp, in a small bowl, toss shrimp with seafood seasoning. Preheat small sauté pan over high heat for 1-3 minutes, then add oil to pan. When oil begins to slightly smoke, add shrimp and cook for 2-3 minutes on one side and another 1-2 minutes on the other side, or until shrimp reach minimum internal temperature of 165°F.
With 2-3 minutes left in shrimp cooking time, preheat separate small nonstick pan over medium-high heat for 1-2 minutes. Add butter and egg, lowering heat to medium-low. Fry egg to desired specifications and season with salt and pepper.
To serve, place a dollop of grits on service plate. Arrange shrimp over grits. Flank shrimp and grits with fried egg. Smother shrimp and grits with 1 cup Chesapeake Gravy and garnish with chopped parsley.
