Chicken and Rice Soup
Directions
- In a large pot over medium high heat, melt butter. Add onions, carrots and celery; sauté 5 minutes.
- Add water, Chicken Base, chicken meat and rice. Stir to combine. Bring to a rapid boil. Reduce heat and continue to simmer for 15-20 minutes until rice is tender.

- .25 cup butter, unsalted
- 2 cups onion, small dice
- 2 cups Carrot, small dice
- 2 cups celery, small dice
- 160 oz. water
- 5 oz. Minor's Chicken Base Low Sodium
- 20 oz. chicken, cooked, light and dark, small diced
- 1.5 cups rice, white
