Place the hot water into a bowl and add the potatoes while whisking. Allow to refresh for 1 minute and
then fluff the potatoes.
For assembly, place the mashed potatoes into a bowl, top with three ounces of the country gravy, on top
of the gravy, place 3 ounces of the sausage crumbles.
Place a biscuit to one side of the bowl and finish with a sprinkling of Tajin and scallions.
