Elotes Gravy Chilaquiles

Directions

  1. To prepare chilaquiles, in small saucepan, simmer Passport Global Flavors™ by Custom Culinary® Tomatillo Serrano Sauce over medium-low heat. Once hot, add tortilla chips and toss with salsa until chips are tender and have absorbed sauce, approximately 2-4 minutes.
  2. Place smothered chips in a mound in preferred serving dish. Top with ½ cup Fire-Roasted Corn Elotes Gravy and scrambled eggs. Garnish with queso fresco, guacamole and cilantro.

  • 2 cups tortilla chips
  • 1 tbsp cilantro, fresh, chopped
  • 2 egg(s), scrambled
  • 1/2 cup Fire-Roasted Corn Elotes Gravy, (see recipe below)
  • 1/4 cup guacamole, prepared
  • 2 tbsp Queso Fresco, crumbled
  • 3/4 cup Passport Global Flavors™ by Custom Culinary® Tomatillo Serrano Sauce

Fire-Roasted Elotes Corn Gravy

Directions

  1. To prepare Fire-Roasted Corn Elotes Gravy, add prepared Custom Culinary® PanRoast® Country Gravy to a medium saucepan.
  2. Add charred corn and Custom Culinary® Master’s Touch® Southwest Flavor Concentrate; simmer over low heat until Flavor Concentrate has dissolved. Remove from heat and hold warm.

  • 3 cups Custom Culinary® PanRoast® Country Gravy, prepared, hot
  • 1 tbsp Custom Culinary® Master’s Touch® Southwest Flavor Concentrate
