Peak Fresh Produce® Garden Frittata
Directions
- Pre-heat convection oven to 375°F for later.
- In an 8” non-stick pan over medium high heat, add butter flavored oil.
- Now add peppers, spinach, broccoli, onion, garlic, spinach, salt, pepper, grape tomatoes, basil, and oregano. Cook 2 minutes.
- Pour in egg mixture and allow to cook while swirling in a circular motion with the handle.
- Sprinkle west creek goat cheese on top and transfer pan to oven and bake for 15-10 minutes until egg is lightly browned on top and fluffy.
- Remove from pan and cut into 6 slices and serve.

- 1 cup Peak Fresh Produce® Spinach, Baby
- 4 ea Peak Fresh Produce® Broccoli, Floret(s), blanched, cut in half
- 1/2 tsp Nature's Best Dairy® Cheese, Goat, hand-torn
- 1/2 tsp Peak Fresh Produce® Oregano, hand-torn
- 6 ea Piancone® Oil, Olive, golden, cut in half
- 3 tbsp Nature's Best Dairy® Cheese, Goat, crumbled
- 1 1/2 tbsp Brilliance Butter Flavored Oil
- 1/8 tsp sea salt
- 1/8 tsp Magellan® Black Pepper, ground
