In a bowl toss the celery with 4 tablespoons of the vinaigrette and place on top of goat cheese. Add watercress to bowl with vinaigrette and toss. Place on top of celery.
Place avocado slices on top of watercress then spread 4 tablespoons of the walnut pesto on other 4 slices of bread. Close sandwiches and slice then serve.

2 cup Peak Fresh Produce® Celery, Stalk(s), cut on bias
2 tbsp Nature's Best Dairy® Cheese, Goat
2 cup watercress
Walnut Pesto
Directions
Toast walnut pieces then place in food processor with salt, pepper, basil and garlic and puree.
While blender is running add olive oil to form pesto.
