Preheat grill to medium high heat, and cut peaches in half, brush with cooking spray and grill flat side down.
Combine butter, brown sugar, flour and granola in a bowl and mix.
Place peaches on a piece of foil, grilled side up. Spoon the granola filling into the center of the peaches. Fold over foil until sealed and bake for 10 minutes @ 350 F.
Remove and plate, top with Vanilla Bean Gelato, finish with Sea Salt Caramel Sauce.
