Jicama Cole Slaw
Directions
- Combine all ingredients in a large bowl and mix thoroughly. Season with salt and pepper to taste. More or less Classic Cole Slaw Dressing can be used depending on the consistency desired.
- Refrigerate. Serve as an alternative to traditional coleslaws for sandwich and seafood dishes.
Ingredients
- 1/2 cup corn, kernels, (whole kernel)
- 1 1/2 lb jicama(s), (peeled, julienned)
- 1/2 cup Peak Fresh Produce® Cilantro, Fresh, (finely chopped)
- 1 tsp pepper, serrano, ground
- 1 pepper(s), red bell, (julienned)
- 1 pepper(s), yellow bell, (julienned)
- 1/4 cup salsa
- - to taste salt and pepper
- 1 cup Village Garden® Classic Coleslaw Dressing
