Mexican Bowl

Directions

  1. Cook rice according to package directions. Once cooked, stir in chopped fresh cilantro.
  2. Heat the chipotle chicken and warm the black beans in a saucepan over medium heat.
  3. Roast corn it in a skillet or oven until slightly charred for a sweeter flavor.
  4. To assemble the bowl, start with a base of cilantro rice. Arrange the chipotle chicken, black beans, roasted corn, and shredded purple cabbage in sections around the rice. Add the diced Hatch green chiles. Place a generous scoop of Contigo® Chunky Avocado on top or on the side. Serve with a side of Contigo Thick & Chunky Salsa (Mild or Medium).

  • 1/4 cup purple cabbage
  • 1/4 cup roasted corn
  • 1/4 cup Hatch chilies, green
  • 1 scoop Contigo® Chunky Avocado
  • 1 scoop Contigo® Salsa, Thick & Chunky , (mild or medium)
