Peach Overnight Oats

Directions

  1. In a very large mixing bowl or a large container, combine the rolled oats, almond milk, Greek yogurt, chia seeds, vanilla extract, cinnamon, and a pinch of salt. Stir thoroughly to ensure everything is well mixed.
  2. Add the Peaches.
  3. Cover the container and refrigerate for at least 6-8 hours, or overnight. This allows the oats and chia seeds to absorb the liquid and soften.
  4. When ready to serve, give the oats a stir. If the mixture is too thick, you can add a little more milk to reach your desired consistency. Serve in bowls and top with sliced almonds, coconut flakes, or a drizzle of honey if desired.

  • (1) #10 can West Creek® Diced Peaches in Juice
  • 20 cups oats, old fashioned, rolled
  • 10 cups almond milk, unsweetened, (or any milk of choice)
  • 10 cups yogurt, Greek, plain
  • 2 cups chia seeds, (optional for extra texture and nutrition)
  • 1/2 cup honey, or maple syrup (optional for additional sweetness)
  • 3 tbsp. vanilla extract
  • 1 tbsp. cinnamon
  • pinch of salt
