Set up a double boiler. Add the white chocolate pieces to a bowl over the simmering water. Stir until melted and then stir in the coconut oil.
Insert a popsicle stick into each slice of cheesecake. Dip each slice of cheesecake halfway in the chocolate shell (may use a spoon to pour over top as well) and then decorate the chocolate area with the sprinkles and sugar.
Let set for about 5 minutes for the shell to harden or transfer to the freezer to store.
