Roma® Gluten-Free Penne Pasta
Directions
- Dip frozen pasta in boiling Water For 15 Seconds
- Transfer pasta into a large mixing bowl and add pesto, mascarpone cheese, sliced grilled chicken, lemon juice and 1/4 cup of reserved pasta water.
- Stir in cherry tomatoes, and season with salt and pepper. Toss well to coat.
- Top with fresh basil, Parmesan cheese.

- 1/2 lb Roma® GF Penne Pasta
- 2 tbsp Roma® extra virgin olive oil
- 1/2 cup Roma® Basil Pesto
- 1/2 cup Roma® Cheese, Mascarpone, at room temperature
- 8 oz West Creek® FC Grilled Chicken Breast, sliced (heated to internal temperature of 165)
- 1 tbsp lemon juice
- 1 cup Peak Fresh Produce® Tomato(es), Cherry, halved
- 1/2 tsp salt
- 1/4 tsp black pepper, ground
- basil, leaves, fresh, chiffonade
- 2 tbsp Roma® Cheese Grated, Parmesan
