Thaw puff pastry sheet on sprayed, parchment-lined sheet pan, covered, either 15-30 minutes at room temperature or refrigerated overnight.
Whisk 1 egg and 2 Tbsp water in small bowl and brush edges of pastry with egg wash.
Reserve remaining egg wash for Assembly.
Leave a 2-inch strip open along one long edge and cover remaining pastry evenly with refried beans.
Sprinkle chorizo, corn and Tajin seasoning evenly over refried beans.
Add cheese then roll towards open strip into a tight pinwheel.
Brush egg wash over puff pastry dough then slice into 12 pieces.
Place flat side down into generously sprayed muffin tins; brush edges with remaining egg wash.
Bake as directed below until dough is flaky and golden brown; serve warm.
