Nogal Mexican Cuisine, New Orleans
Raul started working for his uncle part-time at age 14 as a dishwasher. He worked his way up to manager at age 18, and by 21, he was a partner. Raul later moved to Arkansas and opened several restaurants, using the knowledge he gained from going to Mexico and learning from local chefs. He learned different recipes and salsas that people in the U.S. were not accustomed to and has enjoyed introducing new styles and presentations to his guests.
