Authenticity and innovation are the hallmarks of our Performance Foodservice Italian branded items, and we are excited to announce four varieties of authentic Frozen Pinsa Pizza Crusts in our Piancone® portfolio.
Pinsa is a traditional Italian pizza style, originating from ancient Rome; known for its light and airy crust that differs from the standard pizza crust in both texture and preparation. These pizza crusts differ from traditional crusts by using a mix of flours and a long sourdough fermentation - resulting in a ‘cloudlike’ crust with crisp and chew. Pinsas are literally named for the age-old process of stretching and aerating the dough with the fingers (from the Latin word ‘pinsere.’) After three days of cold fermentation, the dough is hand-stretched to create the iconic fingertip-deep peaks and valleys of the Pinsa crust.
There are three defining features of a Piancone Frozen Pinsa Pizza Crust:
- Flour Blend - a proprietary combination of wheat and chickpea flour and a well-aged sourdough starter give Pinsa pizza crusts a crispy exterior and a tender, almost cloud-like interior. Chickpea flour adds additional protein and fiber.
- High hydration and long sourdough cold fermentation - Pinsa Pizza Crusts have a higher hydrated dough and undergoes a 72-hour cold fermentation which helps with digestibility, enhances flavor, and produces that signature lightness. The combination of high protein less glutenous grain flours coupled with a long cold leavening process that results in a healthier crust with more fiber and protein and less fat and carbohydrates than traditional pizza crusts!
- Crispy and Soft Texture and chew - The combination of flours, hydration, and baking method results in a crust that’s crispy on the outside but chewy and tender.
