Blackened Salmon Caesar Salad
Directions
- In bowl, combine lettuce and croutons with Caesar dressing and mix until coated. Sprinkle salad with parmesan and Romano cheeses (grated or shaved thin), and refrigerate.
- Brush salmon fillets with olive oil, dust with Cajun seasoning and grill to medium rare.
- Meanwhile, in separate bowl, combine 3 oz. Village Garden Ranch dressing and 1 Tbsp. ground Chipotle Chili Pepper, whisk until blended.
- Top salad with blackened salmon and drizzle salmon with Chili-Pepper Ranch mixture.

- 6 oz ranch, chili-pepper
- 1/2 cup Roma® Croutons
- 4 cups Peak Fresh Produce® Lettuce, Romaine, hearts cut and cleaned
- 1 tbsp Piancone® Oil, Olive
- 1 oz Raffinato® Cheese Grated, Parmesan
- 1 oz Raffinato® Cheese Grated, Romano
- 4 6 oz Empire's Treasure® Salmon, Sockeye Fillet(s)
