Blackened Salmon Caesar Salad

Directions

  1. In bowl, combine lettuce and croutons with Caesar dressing and mix until coated. Sprinkle salad with parmesan and Romano cheeses (grated or shaved thin), and refrigerate.
  2. Brush salmon fillets with olive oil, dust with Cajun seasoning and grill to medium rare.
  3. Meanwhile, in separate bowl, combine 3 oz. Village Garden Ranch dressing and 1 Tbsp. ground Chipotle Chili Pepper, whisk until blended.
  4. Top salad with blackened salmon and drizzle salmon with Chili-Pepper Ranch mixture.

  • 6 oz ranch, chili-pepper
  • 1/2 cup Roma® Croutons
  • 4 cups Peak Fresh Produce® Lettuce, Romaine, hearts cut and cleaned
  • 1 tbsp Piancone® Oil, Olive
  • 1 oz Raffinato® Cheese Grated, Parmesan
  • 1 oz Raffinato® Cheese Grated, Romano
  • 4 6 oz Empire's Treasure® Salmon, Sockeye Fillet(s)

Directions

Mix ingredients together well in a bowl and toss on a salad or use as a dip.
