Directions
- Cut cheese into 1/4-inch dice; reserve.
- Fold cheese and vinaigrette into rice.
- Fold in remaining ingredients and reserve.
Ingredients
- 12 oz Real California® Mozzarella cheese
- 1 cup classic vinaigrette
- 2 qts rice, long grain white, cooked
- 2 cups tomato(es), cherry, cut in half
- 2 cups red onion, chopped
- 1/3 cup pepperoncini, stemmed, seeded and coarsely chopped
- 1/2 cup olive(s), black , pitted, chopped coarsely
- 1/4 cup chives, fresh, thinly sliced
- 1/4 cup parsley, fresh, chopped
