Herbed Mozzarella Rice Salad

Directions

  1. Cut cheese into 1/4-inch dice; reserve.
  2. Fold cheese and vinaigrette into rice.
  3. Fold in remaining ingredients and reserve.

Ingredients

  • 12 oz Real California® Mozzarella cheese
  • 1 cup classic vinaigrette
  • 2 qts rice, long grain white, cooked
  • 2 cups tomato(es), cherry, cut in half
  • 2 cups red onion, chopped
  • 1/3 cup pepperoncini, stemmed, seeded and coarsely chopped
  • 1/2 cup olive(s), black , pitted, chopped coarsely
  • 1/4 cup chives, fresh, thinly sliced
  • 1/4 cup parsley, fresh, chopped
