Sautéed Spinach

Directions

  1. Heat a sauté pan over medium-high heat.
  2. Add the butter and olive oil. Once the butter is melted, add the minced garlic and shallots. Cook until the aroma of garlic fills the air.
  3. Add the spinach, salt and pepper, then cover with a lid for 15–20 seconds. Remove the lid and toss with the roasted garlic and nutmeg. Adjust the seasoning. Do not overcook the spinach. It must be bright green, cooked and crisp, and it must keep its leafy identity.

  • 1/2 oz butter
  • 6 cloves garlic, roasted
  • 1 tsp garlic, minced
  • pinch nutmeg
  • 1/2 oz oil, olive
  • salt and pepper, to taste
  • 1 tsp shallot(s), minced
  • 8 oz spinach, curly, slightly wet
