Directions
- Toss fingerling potatoes in olive oil. Then season with salt, pepper, sage, rosemary, thyme, and garlic. Place on a sheet tray and roast for 10-12 minutes at 425°F or until tender. Turn halfway through roasting.
- Mix Chef-mate Country Sausage Gravy with maple syrup and stir to combine.
- Plate fingerling potatoes on oven safe serving plate. Add cheese curds and cook, to warm, without melting the cheese.
- To serve, top potato mixture with an egg, then top with 2 oz. maple sausage gravy. Garnish with chives.

- 3 3/4 lb potato(es), fingerling, peeled, halved lengthwise
- 4 1/2 oz oil, olive
- 2 1/2 tsp sage, chopped
- 2 1/2 tsp rosemary, fresh leaves, chopped
- 2 1/2 tsp thyme, fresh, chopped
- 5 tsp minced garlic
- 1 1/4 cup onion(s), diced, sautéed
- 1 1/4 cup bacon, peppered, cooked, crumbled
- 1 1/2 cup cheese curds, cheddar
- 10 ea egg(s), cooked over easy
- 17 oz Chef-mate® Country Sausage Gravy
- 1/2 cup maple syrup
