Swordfish Frittata
Directions
- To start this recipe, preheat oven to 350F
- For the egg mixture: Crack eggs in a mixing bowl, add remaining ingredients and whisk together.
- Next using an oven safe pot on medium heat, melt butter and then sauté onion and mushrooms for 5 minutes till onions are translucent and mushrooms are soft.
- Next add in bell peppers and scallions, cook for 3 4 minutes or until peppers are slightly soft, then mix in the diced Swordfish.
- Finally add in your eggs. Place the dish in the oven for 40 45 minutes, until the egg is cooked through (check this with a knife in the center).
- Slice and enjoy!

- 6 Cremini mushrooms, sliced
- 1 pepper(s), red bell, diced
- 2 cups Scallions, sliced
- 1/4 tsp salt, sea
- 1/2 tsp black pepper
- 6 oz Empire's Treasure® Swordfish Steak(s), grilled and diced
