Swordfish Frittata

Directions

  1. To start this recipe, preheat oven to 350F
  2. For the egg mixture: Crack eggs in a mixing bowl, add remaining ingredients and whisk together.
  3. Next using an oven safe pot on medium heat, melt butter and then sauté onion and mushrooms for 5 minutes till onions are translucent and mushrooms are soft.
  4. Next add in bell peppers and scallions, cook for 3 4 minutes or until peppers are slightly soft, then mix in the diced Swordfish.
  5. Finally add in your eggs. Place the dish in the oven for 40 45 minutes, until the egg is cooked through (check this with a knife in the center).
  6. Slice and enjoy!

  • 6 Cremini mushrooms, sliced
  • 1 pepper(s), red bell, diced
  • 2 cups Scallions, sliced
  • 1/4 tsp salt, sea
  • 1/2 tsp black pepper
  • 6 oz Empire's Treasure® Swordfish Steak(s), grilled and diced
