Summer is all about flip-flops, long days at the pool, grilling, and cool treats. This summer, though, give your customers mouth-watering desserts from across the globe for something refreshing, but new.

Global fare has been heating up menus this last year, but you don’t have to limit internationally inspired cuisine to just apps and entrées. Infuse some creativity into your dessert menu and heat up sales with these unexpected dessert twists from around the world.

Pavlova: This Australian meringue pie is made with the best fruit of the season, with the most popular choices being kiwi, berries, and mango. This meringue is made with egg whites and baked until it’s crisp on the outside and soft on the inside. Top it with your preferred fruit and whip cream for a light summer dessert that’s sure to please.

After-Chop: This African dessert is a fresh fruit salad, combining the best local fruit of the season (papaya and mango are popular choices), honey, coconut milk, and peanuts. Simply place the ingredients in a bowl and gently combine to coat the fruit. Chill and serve.

Sorbetto: It may be widely known, but we must mention these Italian frozen sorbet desserts, as they may actually be the perfect summertime treat. Made of your favorite sweetened fruit, water, and sugar, sorbetto is the perfect blend of sweet and icy—and quick for those last-minute bookings.

Tiramisu Pops: Another win for Italy! These popsicles are created with ladyfingers dipped into a base containing mascarpone cheese, espresso, sugar, cream, and cocoa powder. Soak them in your favorite coffee liqueur, and then place in popsicle molds with wooden sticks. Chill and enjoy after your favorite summer meal.

Sopaipillas: One of the most revered desserts in Chile, the dough is made of wheat flour and pumpkin. Then these small discs of dough are deep-fried to perfection in a mixture of molasses and fruit.

Coconut Cake: Coconut cake is one of the most beloved cakes in the South. Combined with coconut filling and coconut cream cheese buttercream frosting, this layer cake will be an instant hit for customers across the country.

Japanese Mochi: These small but mighty rice cakes are filled with fruit such as strawberries or mango, or with anko (a sweet red bean paste). Low in cholesterol and high in vitamins A, C, and E, mochi is a healthier dessert to enjoy without guilt.

Russian Honey Cake: This is not your average, dense cake. Russian Honey Cake is made with thin layers of honey-soaked sponge cake, separated by dulce de leche and cream cheese filling.

Spanish Flan: Today, flan is usually associated with Mexican desserts, but this sweet custard has origins in ancient Rome, where it then branched out into Spain. This rich custard is made with eggs, milk, and sugar, and topped with a decadent caramel sauce.

Quinoa Pudding: Bolivians have extended the concept of bread pudding to quinoa, creating a heavenly pudding from quinoa soaked in fig jam and milk. Once simmered and baked, this grainy pudding is as filling as it is delicious.
