Season the pork chop with salt and pepper and sear on both sides. Place some of the Thai Peanut Sauce (recipe below) in a separate cup and brush both sides of the chop.
Place in an oven and roast until an internal temperature of 145 F is reached.
Pour some fresh sauce over top and heat for a minute in the oven. Serve garnished with Sriracha sauce and fresh cut scallions.

to taste salt and pepper
