Apricot Bread Pudding

Directions

  1. Wisk eggs, sugar, milk, cream, butter, and apricots together in a greased 9x13 pan.
  2. Add 4 cups cubed bread to pan and mix until all bread is soaking in the custard.
  3. Mix together 1 tsp cinnamon and 1 tbsp sugar and sprinkle on bread custard mixture.
  4. Cover and bake for 30 minutes until set. Uncover and continue to bake until lightly brown.
  5. Serve with whipped cream.

  • 4 egg(s), lightly beaten
  • 1 cup sugar, (or favorite sweetener)
  • 1 1/2 cup Milk
  • 1/2 cup cream
  • 1/2 cup butter
  • 2 cups Magellan® CA Sun Dried Apricot, diced
