Artichoke Casserole
Directions
- Arrange artichokes in 2 steam table pans.
- Heat the remaining ingredients together and pour over the artichokes.
- Place in a 350º oven for 15 minutes and then hold warm.
- Just before serving, sprinkle coarse chopped pecans (optional) over artichokes.
Ingredients
- 1/2 tsp. garlic, powder
- 2 tsp. oregano, dried
- 3 tsp. Peak Fresh Produce® Lemon(s), zest
- 1 1/2 cup Peak Fresh Produce® Onion(s), minced
- 2 cans Roma® Artichoke Hearts, Quartered
- 2 tbsp salt
- 2 12 oz. cans vegetable stock
- 1 cup West Creek® Lemon Juice
- 1 1/2 sticks West Creek® Margarine
