Asian Pride® Hearts of Palm Salad
Directions
- • Slice hearts of palm into 1/4” thick rings across the grain. Spread across a large platter or individual plates.
- Season hearts of palm with lemon zest, kosher salt, and black pepper, then top with tomatoes and onions.
- In a medium bowl, whisk together sweet chili sauce, lemon juice, mint, pinch kosher salt. When all are dissolved, whisk in olive oil.
- Pour dressing over vegetables, cover & refrigerate until ready to serve, at least 1 hour. This can also be left at room temperature.
- Salad will be very juicy, and is best served with crusty French bread.

- 2 lbs Asian Pride Hearts of Palm, drained
- 1 tbsp Morton® Kosher salt
- Magellan® Whole Black Peppercorns, to taste
- 2 ea Peak Fresh Produce® Lemon(s), zest and juice reserved
- 3/4 cup Asian Pride® Sweet Chili Sauce
- 1/4 cup Peak Fresh Produce® Mint, leaves very thinly sliced or torn
- 1/4 cup Roma® extra virgin olive oil
- 1 pt Peak Fresh Produce® Tomato(es), Grape, cut in half lengthwise
- 1 ea Peak Fresh Produce® Onion(s), Red, very thinly sliced, soaked in ice water, drained
