Avocado Southwest Chicken Salad

Directions

  1. Season & grill chicken breast, diced 1/4 in. and kept warm.
  2. Place lettuce mix & rest of produce into a large bowl. Add chicken. Toss salad with all Avocado Ranch Dressing.
  3. Plate salad on platter.
  4. Garnish with crispy tortilla strips.

  • 8 oz chicken breast, diced 1/4 in.
  • 1 cup corn, kernels, roasted
  • 1/2 cup Red Peppers , diced
  • 1/4 cup pepper(s), green, diced
  • 2 whole avocado(s), skinned and diced
  • 8 oz greens, spring mix
  • 1/4 cup tomato(es), fresh, diced
  • 8 fl oz Ken's® Avocado Ranch Dressing
  • 1 cup tortilla strips, fried
