Baja Battered Shrimp and Fruit Salad
Directions
- Fry shrimp as directed and set aside.
- While shrimp cooks, toss remaining ingredients in a large bowl and dress with Catalina dressing.
- Divide amongst 10 bowls and place four cooked shrimp atop each salad.
- Garnish with sunflower seed kernels and a lime wedge.
Ingredients
- 40 Empire’s Treasure® Shrimp, Battered, 31-35 Count
- 1 cup Magellan® Pineapple, Canned Diced
- 1 cup mango(es), diced
- 3 heads Peak Fresh Produce® Lettuce, Romaine, chopped
- 1/4 cup Peak Fresh Produce® Onion(s), Red, julienne
- 4 Tbsp Peak Fresh Produce® Oregano, chopped
- 5 Peak Fresh Produce® Tomato(es), quartered
- 5 Tbsp. pepper(s) jalapeños, pickled, sliced
- 1/4 cup roasted red peppers, sliced
- 2 cups Village Garden® Honey French Dressing
