Barcelona Spiced NY Strip with Smoked Tomato Jam

Directions

  1. Rub the loin with olive oil then coat the meat with the spice rub.
  2. Sear the roast.
  3. Place in a 325 F oven until cooked to desired temperature.
  4. Serve with Smoked Tomato Jam.

Ingredients

  • 1 Braveheart NY Strip Steak
  • 4 oz oil, olive
  • 2 cups Barcelona Spice Mix, (see recipe below)
  • smoked tomato jam

Barcelona Spice Mix

Directions

  1. Grind the fennel seed and peppercorns in a spice grinder.
  2. Add the rest of the spices and mix.

Ingredients

  • 1/4 cup cayenne pepper
  • 2 tbsp cumin powder
  • 1 cup fennel seed
  • 1/4 cup garlic, powder
  • 1/4 cup paprika
  • 2 tbsp peppercorns, whole
  • 1/2 cup salt, kosher

Smoked Tomato Jam

Directions

  1. Combine in a pot and cook down.
  2. Hit with a stick blender. Reduce until thick.

Ingredients

  • 1 qt smoked tomato concasse
  • 1 qt sugar
