Directions
- Pound the filet into scaloppini with the ham on top.
- Season and coat with the flour.
- Melt the clarified butter in a pan.
- Cook the beef and set aside.
- Sauté the onions and mushrooms in the remaining oil.
- Deglaze the pan with the brandy.
- Add the brown sauce and cream and reduce.

- 2 oz(s). brown sauce
- 1 Tbsp(s). butter, clarified
- 2 Tbsp(s). flour, all-purpose
- 2 oz(s). Nature's Best Dairy® Cream, Heavy
- 4 oz(s). Peak Fresh Produce® Mushroom(s), sliced
- 2 oz(s). Peak Fresh Produce® Onion(s), minced
- 1 Tbsp(s). Peak Fresh Produce® Onion(s), Green, chopped
- 2 slices Ridgecrest® Ham, Black Forest Traditional
- salt and pepper, to taste
