Blackened Pork Chop Stuffed with Wild Rice
Directions
- In a bowl place pork chop and pour the vinaigrette over the chop. Wrap in plastic and refrigerate overnight to marinate.
- Remove pork chop from marinade. Cut a pocket in the side of the pork chop and fill with stuffing. Secure the pocket with the toothpicks. Coat both sides of stuffed pork chop with BBQ seasoning mix, then place onto medium heat region of the grill. Cook for 10-15 minutes or until desired temperature.
- Fan grilled squash around stuffed pork chop, sprinkle red bell peppers on squash and serve.

- 1/2 cup blackening seasoning
- 1 cup Village Garden® Honey Basil Garlic Vinaigrette
- 1 8 oz Allegiance® Premium Pork Chop
- 2 tbsp Peak Fresh Produce® Pepper(s), Red, diced
- 8 slices squash, yellow, grilled
- 1/4 cup Wild Rice Stuffing
Wild Rice Stuffing
Directions
- Cook both rices separately. Put aside.
- Sauté onions, sweet peppers and garlic. Add ground beef and continue to sauté until cooked.
- Remove from heat and add both rice’s and remaining ingredients. Combine to a good mixture and reserve for stuffing pork chops.

- 1/4 lb rice, brown, converted

- 1 1/2 tsp garlic, powder

- 8 oz rice, wild
