Whisk together brown sugar and beef rub. Rub ribs with wing sauce. Coat ribs with rub then wrap and refrigerate overnight.
Whisk bourbon and BBQ sauce in a sauté pan over medium heat and simmer for 5-6 minutes. Remove from pan and reserve.
Remove ribs from refrigerator and unwrap.
Set smoker to 225°. Place ribs meat side down on racks. Cook for 6-7 hours to an internal temperature of 200°. Allow to rest for 10-15 minutes brush with BBQ sauce, then serve.
