Carnitas Tacos
Directions
- In a medium bowl, add quartered onion, jalapeños, tomatillos and garlic. Toss vegetables in oil, salt and pepper.
- Roast vegetables in 375°F oven for 15 minutes. Remove vegetables from oven, add cilantro and blend into salsa.
- To warm carnitas, remove from pack and put meat with liquid in oven-safe sauté pan. Cover meat with foil in oven. While meat warms in oven, warm tortillas.
- Pull carnitas from oven.
- Build tacos and finish with salsa, or place salsa, diced onion and cheese on the side.

- 1 lb. Smithfield® Smoke’NFast® Carnitas
- 2 yellow onion, 1 quartered, 1 diced
- 2 jalapeño(s)
- 1 lb. tomatillo(s)
- 5 garlic, clove(s)
- salt and pepper, to taste
- 1 tbsp. oil, cooking
- 2 bunches cilantro, fresh
- 1 pack Corn Tortillas
- 8 oz. cheese, Chihuahua, shredded
