Carnitas Tacos

Directions

  1. In a medium bowl, add quartered onion, jalapeños, tomatillos and garlic. Toss vegetables in oil, salt and pepper.
  2. Roast vegetables in 375°F oven for 15 minutes. Remove vegetables from oven, add cilantro and blend into salsa.
  3. To warm carnitas, remove from pack and put meat with liquid in oven-safe sauté pan. Cover meat with foil in oven. While meat warms in oven, warm tortillas.
  4. Pull carnitas from oven.
  5. Build tacos and finish with salsa, or place salsa, diced onion and cheese on the side.

  • 1 lb. Smithfield® Smoke’NFast® Carnitas
  • 2 yellow onion, 1 quartered, 1 diced
  • 2 jalapeño(s)
  • 1 lb. tomatillo(s)
  • 5 garlic, clove(s)
  • salt and pepper, to taste
  • 1 tbsp. oil, cooking
  • 2 bunches cilantro, fresh
  • 1 pack Corn Tortillas
  • 8 oz. cheese, Chihuahua, shredded
