Classic Tomato Bisque

Directions

  1. In an 8 qt. sauce pot, melt margarine or butter. Blend in flour. Cook 2-3 minutes, stirring constantly.
  2. Add water, Chicken Base, tomatoes, tomato paste, sugar and salt. Heat to boiling, stirring constantly. Reduce heat and gently boil 2 minutes, stirring occasionally.
  3. Add cream, mixing well. Heat to a gentle boil, stirring frequently.

  • 3/4 cup butter, or margarine
  • 1 1/3 cup flour, all-purpose
  • 3 1/2 qt. water, hot
  • 3 oz. Minor's Chicken Base Low Sodium
  • 14 1/2 oz. tomato(es), canned , with juice, small dice
  • 1 1/3 cup tomato, paste
  • 5 tbsp sugar, granulated
  • 2 tsp salt
  • 8 1/2 oz. cream, heavy, whipping
