Contigo® Barbacoa Stew


  1. Warm oil over medium high heat in a stock pot.
  2. Add onion, garlic, salt, pepper, celery, carrot, and chorizo. Cook stirring for 5-6 minutes.
  3. Drain off excess grease from chorizo.
  4. Add barbacoa, corn, water, birria sauce, and tomatoes. Simmer on medium for 15-20 minutes.
  5. Portion one cup of rice per bowl then ladle a portion of the stew on top.
  6. Garnish with sour cream, avocado, and cilantro sprig.
  7. Serve lime wedge and warm tortillas on the side.


  • 4 cups Asian Pride® Jasmine Rice, cooked
  • 4 cups Contigo® barbacoa beef, shredded
  • 1/2 cup Contigo® Chorizo Sausage
  • 3 tbsp Brilliance Butter Flavored Oil
  • 2 tbsp Peak Fresh Produce® Garlic, minced
  • 1 cup Peak Fresh Produce® Onion(s), Yellow, small dice
  • 1/2 cup Peak Fresh Produce® Celery, small dice
  • 1/2 cup Peak Fresh Produce® Carrot(s), small dice
  • 2 ea bay leaves
  • 1 cup Contigo® birria sauce
  • 1 cup Contigo® Fire Roasted Diced Tomatoes
  • 2 cups West Creek® Corn, Canned, drained and rinsed
  • 4 cups water
  • sea salt, to taste
  • 1/2 tsp Magellan® Black Pepper, ground
  • 4 tbsp Peak Fresh Produce® Avocado, small dice for garnish
  • 1 ea Peak Fresh Produce® Lime(s), quartered for garnish
  • 4 tbsp Nature's Best Dairy® Sour Cream, for garnish
  • 4 sprigs ea Peak Fresh Produce® Cilantro, for garnish
  • 8 ea Contigo® Yellow Corn Tortilla, grilled for garnish
